*20 *Flour that had been used to dredge raw chicken was stored at room temperature. The flour was discarded. EPS discussed temperature and time as a public health control with the manager.  Corrected On-Site.  New Violation.
45 The gasket is damaged/torn on the door of the walk-in freezer. Replace gasket.
Equipment components such as doors, seals, hinges, fasteners and kick plates shall be kept intact, tight and adjusted in accordance with manufacturer's specifications.  New Violation. To be Corrected By: 03/23/2023
   
General Remarks
-Remove cardboard, paper liners, etc. from all shelves of equipment, and foil from the exterior of the fryer. Do not re-use cardboard for food/utensil storage. Discard cardboard once the original product is gone.
-Provide a tight seal at the exit doors of the dry storage area.
-The facility has begun updating labels to include all ingredients and allergen information.
